CRUNCHY -NUT COLLAGEN ICE-CREAM

I’m back with another beauty food recipe - serving you something with skin and beauty benefits, made with minimal ingredients to keep it clean - it is so delicious and basically is your ‘healthy’ alternative to a crunchy almond magnum.

The secret ingredient to elevate your beauty foods skin routine is the IMBIBE - Miracle Collagen.

This is skincare from within - Collagen naturally breaks down over time, and environmental aggressors like stress, UV exposure and pollution can accelerate this process. Miracle Collagen contains bioactive collagen peptides with a specific molecular weight of 2kDa, clinically shown to stimulate the skin cells to produce more collagen and elastin and strengthen the hair and nails.

BEAUTY FOOD INGREDIENTS

COCONUT YOGHURT - Coconut yoghurt is great for the gut as it balances gut flora, also neutralises the skin and helps ease inflammation.

DARK CHOCOLATE - The flavanol’s in dark chocolate can protect against sun damage, improve blood flow to the skin, and increase skin density and hydration. Make sure you are using chocolate above 70% with no added nasties in the ingredient deck. I love Alter Eco chocolate due to its high quality production, minimal ingredients and it taste delicious.

INGREDIENTS

Makes 8

500g COYO Organic Vanilla bean coconut yoghurt

2 tablespoons Organic Crunchy Almond Butter (or nut butter of your choice)

1-2 tablespoons of organic raw honey

2 teaspoons organic cinnamon

1 cup organic nut mix (I used a blend of peanuts, walnuts + Hazelnuts. Crush in a blender.

2 tablespoons IMBIBE Miracle collagen

pinch organic himalayan salt

BPA free ice cream moulds

ice cream sticks

Crunchy chocolate coating

2-3 blocks of Organic Dark chocolate - anything over 70% (depending on how thick you the chocolate coating to be)

2 tablespoons Organic coconut oil

1 cup crushed nut mix

pinch organic himalayan salt

STEPS

  1. In a bowl, mix the COYO coconut yoghurt, IMBIBE miracle collagen, nut butter, raw honey, cinnamon, Himalayan salt and crushed nuts in a bowl until combined.

  2. Place mixture into the ice-cream moulds and secure the ice-cream sticks before putting into the freezer to set for about 3hrs or until hard

CRUNCHY CHOCOLATE COATING

  1. Over a saucepan of boiling water place the dark chocolate and salt until melted.

  2. add the crushed nuts to the mix until combined.

  3. Pour the melted chocolate into a wide and long jar - this will make coating the ice-creams a lot easier.

  4. coat the ice-creams with the crunchy chocolate mix and place on baking paper and back in the freezer to set

  5. This should only take around 5-10 mins to set

CONSUMING - the best way to enjoy these is when the ice cream has softened a little - around 2-5mins is best so the inside is the perfect temperature to enjoy this crunchy chocolate collagen treat.
